Ume syrup - Week 2

  2. yeah, i'm confused too - i only know the alcoholic ume-shu way - does the sugar just melt into the plum juices or what??

  3. I must admit I don't really know... I made a bottle last year, but I made it and put it away and forgot about it for a few months. By the time I remembered it the syrup was ready. I guess the ume juice "leaks" out and dissolves the sugar. The bottle is about half full of liquid, but that should increase. It isn't alcoholic, though, so it doesn't ferment...
