I must admit I don't really know... I made a bottle last year, but I made it and put it away and forgot about it for a few months. By the time I remembered it the syrup was ready. I guess the ume juice "leaks" out and dissolves the sugar. The bottle is about half full of liquid, but that should increase. It isn't alcoholic, though, so it doesn't ferment...
Does this concoction ferment, or does it just dissolve? The process fascinates me.
